Ghee Kaju Mysorepak is a luxurious variant of the traditional Mysorepak, a rich South Indian sweet. This version incorporates cashew nuts (kaju) for added richness and texture.
To make Ghee Kaju Mysorepak, ghee (clarified butter) is used to roast cashew nuts and chickpea flour (besan) until aromatic. Then, a sugar syrup is prepared and mixed into the roasted besan and cashews. The mixture is cooked until it thickens and begins to leave the sides of the pan. It is then poured into a greased tray, smoothed out, and allowed to set before being cut into squares.
